Courgette and Feta Fritters
Crisp Courgette & Feta Fritters – A Summer Favourite
Got a glut of courgettes? These easy fritters are light, crisp and perfect for a summer lunch with a dollop of yoghurt and some fresh mint from the garden.
Ingredients:
- 2 medium courgettes, grated
- 100g feta, crumbled
- 1 egg
- 1 small onion, finely chopped
- 2 tbsp plain flour
- Salt & pepper
- Olive oil for frying
Method:
- Grate the courgette, place in a clean tea towel and squeeze out as much liquid as possible.
- Mix the courgette with crumbled feta, chopped onion, flour, egg and seasoning.
- Heat olive oil in a non-stick frying pan over medium heat.
- Spoon the mixture into the pan and flatten gently. Fry 2–3 minutes each side until golden.
- Serve with lemon wedges and a yoghurt dip.
Perfect with a summer salad or tucked into a wrap for lunch in the garden.
