Courgette and Feta Fritters

Crisp Courgette & Feta Fritters – A Summer Favourite

Got a glut of courgettes? These easy fritters are light, crisp and perfect for a summer lunch with a dollop of yoghurt and some fresh mint from the garden.

Ingredients:

  • 2 medium courgettes, grated
  • 100g feta, crumbled
  • 1 egg
  • 1 small onion, finely chopped
  • 2 tbsp plain flour
  • Salt & pepper
  • Olive oil for frying

Method:

  1. Grate the courgette, place in a clean tea towel and squeeze out as much liquid as possible.
  2. Mix the courgette with crumbled feta, chopped onion, flour, egg and seasoning.
  3. Heat olive oil in a non-stick frying pan over medium heat.
  4. Spoon the mixture into the pan and flatten gently. Fry 2–3 minutes each side until golden.
  5. Serve with lemon wedges and a yoghurt dip.

Perfect with a summer salad or tucked into a wrap for lunch in the garden.
